Seared Scallops scented with curry spices with chicken wing lollipops, cauliflower puree

and curry oil.

Steamed Scottish mussels resting in a leek and bacon chowder with garlic bread.

 

Chicken Liver Parfait

Auld Raes chicken liver parfait, served with red onion marmalade, dressed

mixed leaves and toast.

shallow fried breaded Mushrooms stuffed with Stornoway black pudding garnished

with dressed leaves and a garlic and black pepper mayonnaise.

 

Crab and Mackerel Raviolo

Crab and mackerel encased in pasta with rocket pesto, chilli, cucumber and radish salsa and a light shellfish bisque.

 

Pork Cheek and Potatoe Gateaux  

Slow cooked pork cheek scented with thyme layered with baking potato,

homemade pickled root vegetables and apple gel.

Slow cooked venison, garlic croutons with sloe gin gel, dressed leaves and Madeira reduction.
